Low Carb Super Bowl

The teams are set.  The big game will be here before you know it and its time to start planning.  Whether you'll be watching the game with your family or a group of friends, I've got you covered.  You don't have to compromise nutrition or go off your real food plan for the big party.  You can prepare nutritious, delicious food that will satisfy everyone.  Let's look at a few choices. ZUCCHINI PIZZA BITES Pizza is a big party item.  Skip the crust and go with this zucchini option. Use any toppings you like, mushrooms, veggies, etc.)




2 cups shredded zucchini 1 egg 1 tsp Italian Seasonings 1/2 tsp salt 1/4 tsp pepper 1/2 cup grated provolone cheese 1 cup shredded mozzarella cheese 1/4 cup mini pepperoni slices

Preheat oven to 400 degrees. Spray a mini muffin pan with natural olive oil cooking spray. Place the zucchini in a clean towel and squeeze as much liquid out as you can. In a bowl mix the zucchini, egg, Italian seasoning, salt, pepper and provolone cheese. and cilantro. Evenly divide the mixture into the mini muffin pan, packed down in each cup. Evenly sprinkle mozzarella onto zucchini then top with mini pepperoni slices. Bake for 15- 18 minutes until golden brown around the edges. Mine were perfect at 15 minutes. Allow to cool about 10 minutes before removing. Use a knife to cut around edges to loosen from muffin pan. Enjoy warm or room temperature.

4 cups steamed cauliflower 1 cup grated parmesan 1/3 cup coconut flour 1 cup shredded mozzarella 2 eggs 1 tsp garlic powder 1/2 tsp garlic salt

Preheat oven to 425 degrees F. Place steamed cauliflower in a food processor and pulse until it resembles crumbs. Pour it into a bowl and stir in the remaining ingredients until combined. Line a baking sheet with parchment paper. Using a cookie scoop about a tablespoon of the mixture, form cylinder shapes. I was able to make 32 tots. Bake for 15 minutes then flip them over for cook another 5 minutes. Cool slightly then enjoy!

1 1/2 cups pre-shredded mozzarella 2 tbsp full fat cream cheese 1 egg 3/4 cup almond flour or ground almonds 1/2 tsp baking powder pinch of coarse sea salt Heat the oven to 356 F. Melt the mozzarella and the cream cheese. I did this in a pan on a very low heat, stirring constantly once the melting process starts. If you have a microwave, 1 minute should do the trick. If you do this on the stove, turn off the heat once the cheese is fully melted. Add the egg to the warm dough and stir until combined. If your egg is straight from the fridge, you might have to heat the mixture gently. Add the ground almonds and baking powder and stir until combined. You should end up with a big mozzarella ball that looks just like dough. Pinch off a piece of dough and stretch/roll it in your hands until it is about 20 cm long. If the dough is too sticky, you can try oiling your hands. Form it into a pretzel shape and place on a baking sheet. My dough made 10 pretzels. Sprinkle with sea salt and bake for 17 minutes or until nicely browned. You might want to rotate the baking sheet half way through. https://sugarfreelondoner.com/genius-grain-free-pretzels/ LOW CARB SPANAKOPITA HAND PIES Who doesn't love a hand pie?  Popeye would be jealous of these spinach pies.




6 ounces frozen spinach thawed 1 cup crumbled feta cheese 1 large egg 1/4 cup finely chopped onion 1 clove garlic minced 3/4 tsp salt 1/2 tsp pepper 1 Magic Mozzarella Dough from Garlic Knots Additional almond flour for rolling out. 

Preheat the oven to 350F. Place the spinach in a tea towel and squeeze out the excess moisture. Transfer to a large bowl. Add the feta, egg, onion, garlic, salt, and pepper and mix until well combined. Sprinkle a work surface with about 2 or 3 tablespoons of almond flour. Roll the dough out into a large square about 16 inches by 16 inches. Using a very sharp knife or a pizza wheel, cut into 16 even squares. Mound about 1 tablespoons of the spinach mixture into the center of each square. Fold the dough square over diagonally to make a triangle shaped pie. If the dough breaks or cracks when folding, simply pinch back together and shape around the filling. Place the triangles on the prepared baking sheet and make a small slit in the top of each to allow the steam to escape. Bake 20 minutes, until golden brown. Remove and let cool on the pan.

Magic Mozzarella Dough

6 ounces pre-shredded part skim mozzarella 5 tbsp butter 1/2 cup blanched almond flour 1/4 cup coconut flour 2 tsp baking powder 1/2 tsp garlic powder 1/4 tsp salt 1 large egg

Sprinkle a clean counter or a large silicone baking mat with almond flour. In a large saucepan, melt the cheese and butter together over low heat until they are melted and can be stirred together. Remove from heat and add the almond flour, coconut flour, baking powder, garlic powder, and salt. Add the egg and stir everything together until a cohesive forms. Use a rubber spatula to really knead the dough together in the pan. It may still contain some streaks of cheese. Turn the dough out onto the prepared work surface and knead until uniform. This will only take a little kneading. If your dough is still very sticky, add a tablespoon or two additional almond flour and work it in.

5 pounds chicken wings 1 cup apple cider vinegar 1/2 cup extra virgin olive oil Dry Seasonings 2 teaspoons onion powder 2 teaspoons garlic powder 2 teaspoons sea salt or Himalayan Pink 1 teaspoon pepper 2 tablespoons Swerve or erythritol 2 teaspoons dried parsley Optional: Malt vinegar’’ Lay the chicken wings in a 9 by 13 baking pan. Whisk the vinegar and oil together and pour over the wings. Allow to marinate for at least 30 minutes or up to 24 hours in the refrigerator. Preheat oven to 425 degrees . Bake the wings for 30 minutes right from the pan they've marinated in. Whisk the dry ingredients together in a shallow bowl and set aside. Remove the wings from the pan they baked in and place them on a baking sheet. Sprinkle both sides of the wings with the seasonings. Broil for 3-4 minutes until golden brown. CHOCOLATE PUMPKIN SUNBUTTER TREATS Don't forget about a little something sweet.




2 cup Enjoy Life Chocolate Chips (or dark chocolate brand of choice) 1/3 cup coconut milk 1/2 cup sunflower seed butter (or other seed or nut butter) 1/3 cup pumpkin puree 1/2 cup raw honey 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg 1/8 teaspoon ground cloves 1/8 teaspoon powdered ginger pinch of salt, to top

Melt chocolate chips and coconut milk in microwave or in a double boiler until smooth. Line an 8x8 baking dish with parchment paper (for easy clean up and removal). Pour chocolate into the dish and smooth out. In a bowl, mix together sunbutter, pumpkin, honey, cinnamon, nutmeg, cloves, and ginger until smooth. Spoon sunbutter mixture on top of chocolate and use a knife to spread throughout the chocolate mixture. Just keep making pretty designs in it until it is well mixed. Top with a pinch of salt. Place in freezer and let freeze for 4+ hours. Use a large knife to cut into small pieces. Serve immediately. Store in freezer.
